1/2 cup unsalted butter
1 cup granulated sugar
2 large eggs
1 tsp vanilla extract
1/3 cup unsweetened cocoa powder
1/2 cup einkorn flour
1/4 tsp salt
1/4 tsp baking powder
1/2 cup semi-sweet chocolate chips
Optional: 1/4 cup chopped nuts
Instructions
Preheat oven to 350°F (175°C) and grease or line an 8×8-inch baking pan with parchment paper.
In a medium saucepan, melt the butter over low heat. Remove from heat and stir in sugar, eggs, and vanilla until smooth.
Whisk in cocoa powder, then add einkorn flour, salt, and baking powder. Stir until just combined.
Fold in chocolate chips and nuts if using.
Spread the batter evenly into the prepared pan.
Bake for 20–25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Let cool in pan before cutting into squares and serving.
Notes
Do not overbake for best fudgy texture.
Store in an airtight container at room temperature for up to 3 days.
Can be frozen for longer storage—wrap individually for easy snacking.
