This Dr. Pepper Cake is a moist, chocolatey dessert infused with the unique flavor of Dr. Pepper soda. Topped with a rich chocolate glaze or frosting, it’s a nostalgic treat that’s perfect for parties, potlucks, or just because!

For the Cake:

  • 2 cups (250 g) all-purpose flour
  • 1 1/2 cups (300 g) granulated sugar
  • 1/2 cup (40 g) unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (240 ml) Dr. Pepper soda (not diet)
  • 1/2 cup (115 g) unsalted butter, melted
  • 2 large eggs
  • 1/2 cup (120 ml) buttermilk
  • 1 tsp vanilla extract

For the Frosting (Optional):

  • 1/4 cup (60 ml) Dr. Pepper soda
  • 1/4 cup (115 g) unsalted butter
  • 2 tbsp (15 g) unsweetened cocoa powder
  • 2 cups (240 g) powdered sugar
  • 1/2 tsp vanilla extract


Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.

2. Mix the Dry Ingredients:

  • In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.

3. Add the Wet Ingredients:

  • In a separate bowl, combine the Dr. Pepper, melted butter, eggs, buttermilk, and vanilla extract. Beat until smooth.

4. Combine and Mix:

  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

5. Bake the Cake:

  • Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

6. Prepare the Frosting (Optional):

  • In a small saucepan, combine the Dr. Pepper, butter, and cocoa powder. Heat over medium heat, stirring, until the butter melts and the mixture is smooth.
  • Remove from heat and whisk in the powdered sugar and vanilla extract until smooth.

7. Frost the Cake:

  • Pour the frosting over the cooled cake and spread it evenly. Let it set for 10-15 minutes before serving.


Notes

  • For extra flavor, add 1/2 tsp cinnamon or a pinch of nutmeg to the cake batter.
  • Top the frosted cake with chopped pecans, shredded coconut, or mini chocolate chips for added texture.
  • Leftovers can be stored in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
