Ingredients

Scale
  • Cake:
    2 large eggs
    1/2 cup xylitol-free peanut butter
    1/4 cup vegetable oil
    2/3 cup milk or water
1/3 cup honey or maple syrup
    2 1/2 cups grated carrots
2 cups plain or whole wheat flour
    2 1/2 tsp baking soda
  • Potato Frosting:
1 kg potatoes, peeled and chopped
3/41 cup plain unsweetened yogurt or water
Blue food coloring (optional, for outer layer)
  • Yogurt Drip:
    1/2 cup cornstarch
    1/4 cup plain yogurt
    12 tbsp milk or water
  • Decorations:
Dog-safe decorations, birthday topper, candles (for photo only)

Instructions

  1. Preheat oven to 180°C (350°F). Grease and line two 6-inch cake pans.
  2. In a bowl, whisk eggs, peanut butter, oil, honey, and milk. Stir in grated carrots.
  3. Fold in flour and baking soda until just combined. Divide between pans and bake for 30 minutes or until a skewer comes out clean.
  4. Cool cakes completely, then slice each into two even layers.
  5. Boil potatoes until soft, then mash and whip with yogurt until smooth and fluffy. Tint a portion blue if desired.
  6. Stack cake layers with white frosting between, then coat the outside with blue frosting.
  7. For the drip, mix cornstarch, yogurt, and milk until pourable. Drizzle over the cake edges and top.
  8. Decorate with dog-safe treats and chill until serving.

Notes

  • Ensure peanut butter is xylitol-free.
  • Whip frosting while warm and apply to cooled cake for smooth texture.
  • Yogurt drip sets best when applied to cold cake.
  • Store leftovers in the fridge for up to 3 days.
