This adorable Easter Bunny Cake is a fun and festive centerpiece for your holiday celebrations. Made with moist, delicious cake and decorated with fluffy white frosting and coconut “fur,” this bunny-shaped cake will delight kids and adults alike!

  • 1 box (15.25 ounces) white or vanilla cake mix (plus ingredients called for on the box)
  • 1 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs

For the Frosting and Decorations:

  • 2 cups (16 ounces) vanilla frosting (store-bought or homemade)
  • 1 ½ cups sweetened shredded coconut
  • Jelly beans or candy-coated chocolates (for eyes and nose)
  • Red licorice strings (for whiskers and mouth)
  • Pink construction paper or pink sprinkles (for inner ears)
  • Optional: Green-tinted coconut or green sprinkles (for grass effect)

Instructions

  1. Bake the Cake:

    • Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
    • Prepare the cake mix according to the package directions, combining water, oil, and eggs.
    • Pour the batter evenly into the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  2. Shape the Bunny:

    • Place one whole cake layer in the center of a large serving tray (this will be the bunny’s head).
    • Cut the second cake layer into two ears and a bow tie:
      • Cut two convex-shaped pieces from the sides to form the ears.
      • The remaining center piece will be the bow tie.
    • Arrange the ears above the head and the bow tie below the head on the tray.
  3. Frost the Cake:

    • Spread a thin layer of frosting over the entire cake for a crumb coat. Chill for 10-15 minutes.
    • Apply a generous layer of frosting to cover the cake evenly.
  4. Decorate the Bunny:

    • Sprinkle shredded coconut over the frosted cake to create a furry texture.
    • Use jelly beans or candy-coated chocolates for the bunny’s eyes and nose.
    • Create whiskers and a mouth using red licorice strings.
    • For the ears, use pink construction paper or add pink sprinkles to the frosting in the ear area.
    • If desired, sprinkle green-tinted coconut around the cake to create a grass effect.
