These Easter M&M Cookie Bars are soft, chewy, and filled with colorful candy-coated chocolate pieces. They’re the perfect festive treat for spring celebrations and are easy to whip up in one bowl. Great for parties, Easter baskets, or a fun baking activity with kids!
1 cup (2 sticks) unsalted butter, melted
1 cup brown sugar, packed
½ cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
2½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1½ cups pastel Easter M&M candies
½ cup white chocolate chips (optional)
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper.
In a large bowl, whisk together melted butter, brown sugar, and granulated sugar until smooth.
Add eggs and vanilla extract. Mix until fully combined.
Stir in flour, baking soda, and salt. Mix just until combined—don’t overmix.
Fold in Easter M&M candies and white chocolate chips if using.
Spread the dough evenly into the prepared pan. Press a few extra M&Ms on top for a pretty finish.
Bake for 22–25 minutes, or until the edges are golden brown and the center is set.
Allow to cool completely in the pan before slicing into bars.
You can use regular M&Ms if Easter ones aren’t available.
These bars can be stored in an airtight container at room temperature for up to 5 days.
For gooier bars, bake slightly less; for firmer bars, leave in an extra couple of minutes.
