2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon almond extract (optional)
Assorted colored icing and sprinkles for decorating
Instructions
In a bowl, whisk together the flour, baking powder, and salt. Set aside.
In a large bowl, beat the butter and sugar together until light and fluffy.
Add the egg, vanilla extract, and almond extract (if using) and beat until combined.
Gradually add the flour mixture, mixing just until combined.
Divide the dough in half, flatten into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
Roll out the dough on a lightly floured surface to 1/4-inch thickness. Cut into Easter shapes with cookie cutters.
Place cookies on prepared baking sheets and bake for 8-10 minutes, or until edges are just beginning to turn golden.
Let cool completely before decorating with icing and sprinkles.
