1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
2 carrots, peeled and sliced
2 celery stalks, sliced
1 zucchini, diced
1 can (14.5 oz) diced tomatoes
4 cups vegetable or chicken broth
1 cup water
3/4 cup dry alphabet pasta
1/2 tsp dried basil
1/2 tsp dried oregano
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions
In a large pot, heat olive oil over medium heat. Add onion and garlic, sauté for 2–3 minutes until softened.
Add carrots, celery, and zucchini. Cook for 5 minutes, stirring occasionally.
Stir in diced tomatoes, broth, and water. Bring to a boil.
Add alphabet pasta, basil, oregano, salt, and pepper. Reduce heat and simmer for 10–12 minutes, or until pasta and vegetables are tender.
Taste and adjust seasoning as needed. Garnish with parsley before serving, if desired.
Notes
Substitute or add any veggies you have on hand like peas or corn.
Use whole wheat or gluten-free alphabet pasta for dietary preferences.
