This Easy Beef Queso Dip is rich, creamy, and loaded with seasoned ground beef and melty cheese. It’s the ultimate game day or party dip, perfect for scooping with tortilla chips or drizzling over nachos. Quick to make and totally irresistible!

Ingredients

  • 1/2 lb ground beef

  • 1/2 tsp salt

  • 1/2 tsp chili powder

  • 1/4 tsp cumin

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 10 oz diced tomatoes with green chiles (like Ro*Tel), undrained

  • 16 oz processed cheese (like Velveeta), cubed

  • 1/4 cup whole milk (optional, for thinning)

  • Chopped cilantro or jalapeños for garnish (optional)


Instructions

  1. Cook the Beef:
    In a skillet over medium heat, cook ground beef until browned. Drain excess fat if needed. Stir in salt, chili powder, cumin, garlic powder, and onion powder.

  2. Add Tomatoes and Cheese:
    Reduce heat to low. Add the diced tomatoes with green chiles (undrained) and cubed cheese to the skillet. Stir often until the cheese is completely melted and everything is combined.

  3. Adjust Consistency:
    If the dip is too thick, stir in a splash of milk until it reaches your desired consistency.

  4. Serve:
    Transfer to a serving bowl or keep warm in a slow cooker or fondue pot. Garnish with chopped cilantro or jalapeños if you like.

Notes

  • Swap beef for ground turkey or chorizo if you’d like to change it up.

  • Want it spicy? Use hot Ro*Tel or add chopped jalapeños.
