A quick and hearty one-pan beef taco skillet packed with seasoned ground beef, veggies, and cheese, perfect for a busy weeknight dinner.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1/2 cup water
  • 1 cup canned black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)
  • Tortilla chips or warm tortillas for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and bell pepper; sauté for 3-4 minutes until softened.
  3. Add ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
  4. Drain excess fat if needed.
  5. Stir in taco seasoning and water, mixing well.
  6. Add black beans and corn, and cook for another 2-3 minutes until heated through.
  7. Sprinkle shredded cheese over the top and cover the skillet for 2-3 minutes until the cheese melts.
  8. Garnish with fresh cilantro and serve with tortilla chips or warm tortillas.

  • Use ground turkey or chicken for a lighter option.
  • Add jalapeños or hot sauce for extra spice.
  • This dish also makes a great filling for tacos, burritos, or lettuce wraps.
