This Easy Blueberry Crisp is a sweet, juicy dessert topped with a buttery oat crumble. Made with fresh or frozen blueberries, it comes together quickly and bakes into a bubbly, golden treat. Serve it warm with a scoop of vanilla ice cream or a dollop of whipped cream for the perfect finish.

For the Blueberry Filling:

  • 4 cups blueberries (fresh or frozen)

  • ¼ cup granulated sugar

  • 1 tablespoon cornstarch

  • 1 tablespoon lemon juice

  • ½ teaspoon vanilla extract

For the Crisp Topping:

  • ¾ cup old-fashioned rolled oats

  • ½ cup all-purpose flour

  • ⅓ cup brown sugar, packed

  • ¼ teaspoon cinnamon

  • ¼ teaspoon salt

  • ½ cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch or similar-sized baking dish.

  2. In a large bowl, mix together the blueberries, sugar, cornstarch, lemon juice, and vanilla. Pour into the prepared baking dish.

  3. In a separate bowl, combine oats, flour, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until crumbly and well combined.

  4. Sprinkle the oat topping evenly over the blueberry mixture.

  5. Bake for 35–40 minutes, or until the filling is bubbly and the topping is golden brown.

  6. Let cool for 10–15 minutes before serving. Best served warm with ice cream!

Notes

  • Frozen blueberries work great – no need to thaw first.

  • Add a handful of chopped nuts (like pecans or almonds) to the topping for extra crunch.
