These Easy Blueberry Pie Bars are a simple and delicious dessert featuring a buttery shortbread crust, juicy blueberry filling, and a crumbly topping. Perfect for summer gatherings or a sweet snack.

  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 cups fresh or frozen blueberries
  • 1/3 cup granulated sugar (for filling)
  • 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1/2 tsp lemon zest (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper.
  2. In a large bowl, mix melted butter, 1 cup sugar, salt, and vanilla. Stir in flour until crumbly dough forms.
  3. Press 2/3 of the dough into the bottom of the prepared pan. Bake for 10 minutes, then set aside.
  4. In another bowl, toss blueberries with 1/3 cup sugar, cornstarch, lemon juice, and zest if using.
  5. Spread blueberry mixture evenly over the baked crust.
  6. Crumble the remaining dough over the blueberries.
  7. Bake for 35–40 minutes, or until topping is lightly golden and filling is bubbly.
  8. Cool completely in the pan, then refrigerate for at least 1 hour before cutting into bars.

Notes

  • Use fresh or frozen blueberries — no need to thaw if frozen.
  • Store bars in an airtight container in the fridge for up to 5 days.
  • These bars can also be made with raspberries, blackberries, or a mix of berries.
