Easy Cheesy Chicken Bacon Ranch Quesadillas are a crispy, cheesy, and flavor-packed meal that comes together in just minutes. Made with juicy chicken, crispy bacon, gooey cheese, and ranch dressing, these quesadillas are perfect for lunch, dinner, or a quick snack!

  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 4 large flour tortillas
  • 1 ½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • ½ cup cooked bacon, crumbled (about 4 slices)
  • ¼ cup ranch dressing (plus extra for dipping)
  • 1 tbsp butter (or cooking spray, for crispy tortillas)
  • ½ tsp garlic powder (optional, for extra flavor)
  • ½ tsp black pepper
  • ¼ cup chopped green onions or fresh parsley (optional garnish)

Instructions

1. Prepare the Filling:

  • In a bowl, mix shredded chicken, bacon, ranch dressing, garlic powder, and black pepper.

2. Assemble the Quesadillas:

  • Lay a flour tortilla on a flat surface.
  • Sprinkle ¼ cup of cheese evenly over half of the tortilla.
  • Add ¼ of the chicken-bacon mixture on top.
  • Sprinkle another ¼ cup of cheese over the chicken.
  • Fold the tortilla in half, pressing lightly to seal.
  • Repeat with remaining tortillas.

3. Cook Until Crispy:

  • Heat a large skillet over medium heat and melt a little butter.
  • Place a quesadilla in the skillet and cook for 2-3 minutes per side, until golden brown and crispy.
  • Repeat for all quesadillas.

4. Slice & Serve:

  • Cut into triangles and serve with extra ranch dressing, salsa, or sour cream!
  • Garnish with green onions or parsley if desired.


Notes

Make It Spicy: Add sliced jalapeños or a dash of hot sauce to the filling.
Low-Carb Option: Use low-carb tortillas or serve the filling in lettuce wraps.
