This easy Chicken Tetrazzini recipe is a classic, hearty pasta bake made with tender chicken, creamy sauce, and melty cheese. It’s a family-friendly meal that’s simple to prepare and always satisfying!

  • 12 oz spaghetti or fettuccine
  • 3 cups cooked chicken, shredded or diced
  • 1/4 cup unsalted butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 8 oz mushrooms, sliced (optional)
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream or milk
  • 1/2 cup sour cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp Italian seasoning (optional)
  • 1 cup shredded Parmesan cheese, divided
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook the Pasta:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
    • Cook the pasta in salted water according to package instructions until al dente. Drain and set aside.
  2. Make the Sauce:
    • In a large skillet, melt the butter over medium heat. Sauté the onion and garlic until softened, about 2-3 minutes.
    • Add the mushrooms (if using) and cook until tender, about 5 minutes.
    • Sprinkle the flour over the mixture and stir to coat. Gradually whisk in the chicken broth and heavy cream. Cook until the sauce thickens, about 5 minutes.
  3. Add Seasoning and Cheese:
    • Stir in sour cream, salt, pepper, and Italian seasoning (if using). Mix in 1/2 cup of Parmesan cheese until melted.
  4. Combine Pasta and Chicken:
    • In a large mixing bowl, combine the cooked pasta, shredded chicken, and sauce. Toss until everything is evenly coated.
  5. Assemble the Casserole:
    • Pour the pasta mixture into the prepared baking dish. Sprinkle with the remaining Parmesan cheese and mozzarella cheese.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Garnish with fresh parsley, if desired, and serve warm.
