Easy Churro Bites

Easy Churro Bites are a quick and delicious version of the classic Mexican treat. These bite-sized morsels are fried until golden, then tossed in cinnamon sugar for a sweet, crispy exterior and a soft, doughy center.

Ingredients

  • 1 cup water
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • Vegetable oil, for frying
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. In a medium saucepan, combine water, 2 tablespoons sugar, salt, and butter. Bring to a boil over medium heat.
  2. Remove from heat and quickly stir in the flour until a dough forms and pulls away from the sides of the pan.
  3. Let the dough cool for 5 minutes. Then add eggs one at a time, mixing well after each addition until smooth. Stir in vanilla extract.
  4. Heat oil in a deep pot or skillet to 350°F (175°C).
  5. Transfer dough to a piping bag fitted with a large star tip. Pipe 1-inch pieces of dough into the hot oil, cutting with scissors.
  6. Fry in batches until golden brown and cooked through, about 2–3 minutes per batch.
  7. Remove with a slotted spoon and drain on paper towels.
  8. In a bowl, mix 1/2 cup sugar with cinnamon. Toss warm churro bites in the cinnamon sugar to coat.
  9. Serve immediately with chocolate sauce or dulce de leche if desired.

Notes

  • Don’t overcrowd the pan when frying; work in small batches for best results.
  • You can bake the bites at 375°F for 20–25 minutes for a lighter version, then coat with cinnamon sugar.
  • Best enjoyed fresh, but can be stored in an airtight container for 1 day and reheated in the oven.
