1 box lemon cake mix
1/3 cup butter, melted
2 large eggs, divided
1 can (14 oz) sweetened condensed milk
1/2 cup lemon juice (fresh or bottled)
1 tablespoon lemon zest (optional)
Powdered sugar for dusting (optional)
Instructions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a bowl, combine cake mix, melted butter, and 1 egg. Mix until a dough forms.
Press the dough evenly into the bottom of the prepared pan to form a crust.
In another bowl, whisk together sweetened condensed milk, lemon juice, remaining egg, and lemon zest until smooth.
Pour the lemon mixture over the crust and spread evenly.
Bake for 25–30 minutes or until the edges are lightly golden and the center is set.
Cool completely, then refrigerate for at least 1 hour before slicing.
Dust with powdered sugar before serving, if desired.
Notes
For extra citrus flavor, add orange or lime zest to the filling.
