This Easy Creamy Lasagna Soup has all the rich, cheesy flavors of lasagna in a cozy bowl! Made with ground beef, pasta, and a creamy tomato broth, this one-pot soup is perfect for a quick and comforting meal.

Ingredients

For the Soup:
  • 1 lb ground beef (or Italian sausage)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes (optional)
  • 8 lasagna noodles, broken into pieces
  • ½ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
For the Ricotta Topping:
  • ½ cup ricotta cheese
  • 1 tablespoon fresh parsley, chopped
  • ¼ teaspoon salt

Instructions

  • Cook the meat – In a large pot, cook ground beef over medium heat until browned. Drain excess grease.
  • Sauté the aromatics – Add diced onion and garlic, cooking for 2-3 minutes until softened.
  • Simmer the soup – Stir in beef broth, crushed tomatoes, diced tomatoes, tomato paste, Italian seasoning, salt, black pepper, and red pepper flakes. Bring to a simmer and cook for 10 minutes.
  • Cook the pasta – Add broken lasagna noodles and simmer for 10-12 minutes, until pasta is tender.
  • Make it creamy – Stir in heavy cream, mozzarella, and Parmesan cheese until melted.
  • Prepare the ricotta topping – In a small bowl, mix ricotta, parsley, and salt.
  • Serve & enjoy – Ladle soup into bowls and top with a dollop of ricotta mixture. Enjoy warm!
