This Easy Date Bark is a no-bake treat made with soft Medjool dates, creamy peanut butter, crunchy nuts, and a rich chocolate topping. It’s sweet, salty, and seriously addicting. Perfect for a quick dessert or healthy-ish snack, and it stores beautifully in the fridge or freezer!

Ingredients

  • 12 Medjool dates, pitted

  • ¼ cup creamy peanut butter (or almond butter)

  • ¼ cup chopped almonds or peanuts

  • ½ cup dark chocolate chips

  • 1 teaspoon coconut oil

  • Sea salt, for sprinkling

Instructions

  1. Line a small baking sheet or plate with parchment paper.

  2. Open each date and press them flat onto the parchment paper, forming a rectangle or square shape with no big gaps.

  3. Spread peanut butter evenly over the layer of dates.

  4. Sprinkle chopped nuts over the peanut butter layer, pressing them in gently.

  5. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals until smooth.

  6. Pour the melted chocolate over the nut layer and spread evenly with a spoon or spatula.

  7. Sprinkle with sea salt.

  8. Place in the freezer for 20–30 minutes until the bark is firm.

  9. Once set, break into pieces and enjoy!

Notes

  • Use tahini or sunflower seed butter for a nut-free version.

  • Add shredded coconut, chopped pretzels, or cacao nibs for extra texture.

  • Store in the fridge for up to 1 week or freeze for up to 2 months.
