These Easy Easter Egg Brownie Bites are rich, fudgy mini brownies topped with colorful chocolate eggs – perfect for spring celebrations or Easter dessert tables. They’re simple to make using a boxed brownie mix or homemade batter and come out perfectly portioned every time!

  • 1 box brownie mix (plus ingredients called for on box – usually eggs, oil, water)
    or use your favorite homemade brownie batter

  • ½ cup mini chocolate eggs (like Cadbury Mini Eggs or similar), chopped or whole

  • Optional: pastel sprinkles or crushed mini eggs for extra color

Instructions

  1. Preheat oven to 350°F (175°C). Grease a mini muffin pan or line with mini paper liners.

  2. Prepare brownie batter according to package instructions (or use homemade).

  3. Spoon batter into mini muffin cups, filling each about ¾ full.

  4. Press 1–2 mini eggs gently into the center of each brownie cup.

  5. Bake for 12–15 minutes, or until the tops are set and a toothpick comes out with moist crumbs.

  6. Cool in the pan for 5–10 minutes, then carefully transfer to a wire rack to cool completely.

  7. Optional: Decorate with pastel sprinkles or a drizzle of melted white chocolate and more crushed eggs.

Notes

  • Don’t overbake! These are best with a soft, fudgy center.

  • You can use a regular muffin tin for larger brownie bites – just increase the baking time to 18–22 minutes.

  • Add a touch of fun by placing the mini eggs after baking if you want them to stay whole and visible.
