Ingredients

Scale
For the Ribs:
  • 2 racks (about 4 lbs) baby back ribs or St. Louis-style ribs
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon cayenne pepper (optional, for heat)
For the Honey-Garlic Glaze:

  • ½ cup honey
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 3 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon apple cider vinegar (or rice vinegar)
  • 1 teaspoon sesame oil (optional, for depth)
  • ½ teaspoon red pepper flakes (optional, for spice)

Instructions

  • Prep the Ribs:

    • Remove the membrane from the back of the ribs (use a paper towel to grip and pull it off).
    • Season both sides with salt, black pepper, paprika, garlic powder, onion powder, and cayenne.
  • Pre-Cook for Tender Ribs (Optional):

    • Wrap ribs in foil and bake at 300°F (150°C) for 2 hours, or
    • Simmer in a large pot of water for 1 hour, then drain.
    • (This step ensures extra tenderness but can be skipped for direct grilling.)
  • Make the Honey-Garlic Glaze:

    • In a small saucepan, combine honey, soy sauce, garlic, ketchup, vinegar, sesame oil, and red pepper flakes.
    • Simmer over medium heat for 5 minutes, stirring, until slightly thickened.
  • Grill the Ribs:

    • Preheat grill to medium heat (350-375°F).
    • Place ribs bone-side down and grill for 10-15 minutes, flipping occasionally.
    • Brush ribs generously with the honey-garlic glaze and continue grilling for 5-10 more minutes, flipping and basting until caramelized.

  • Rest & Serve:

    • Remove from grill and let rest for 5 minutes.
    • Slice and serve with extra glaze on the side.

Notes

  • Want extra caramelization? Broil the ribs for 2-3 minutes after grilling.
  • No grill? Bake at 375°F for 20 minutes, basting with glaze every 5 minutes.
  • Pair with sides like coleslaw, grilled corn, or garlic bread!
