These Easy Grilled Shrimp Tacos are light, zesty, and packed with smoky flavor. Marinated shrimp are grilled to perfection and wrapped in warm tortillas with crunchy slaw, creamy sauce, and fresh toppings. A simple and delicious meal ready in under 30 minutes!

For the shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 2 tbsp olive oil

  • 2 tbsp lime juice

  • 2 cloves garlic, minced

  • 1 tsp chili powder

  • 1/2 tsp ground cumin

  • 1/2 tsp paprika

  • Salt and pepper, to taste

For serving:

  • 8 small corn or flour tortillas

  • 2 cups shredded cabbage or slaw mix

  • 1/4 cup chopped cilantro

  • 1 avocado, sliced

  • Lime wedges

Optional sauce:

  • 1/4 cup sour cream or Greek yogurt

  • 1 tbsp mayonnaise

  • 1 tbsp lime juice

  • 1 tsp hot sauce or sriracha

  • Pinch of salt

Instructions

  1. Marinate the shrimp:
    In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Add shrimp and toss to coat. Marinate for 10–15 minutes while you prep toppings and heat the grill.

  2. Grill the shrimp:
    Preheat grill (or grill pan) to medium-high. Thread shrimp onto skewers or place directly on the grates. Grill for 2–3 minutes per side, until pink and opaque.

  3. Warm the tortillas:
    Quickly grill tortillas for 20–30 seconds per side until warm and slightly charred.

  4. Assemble the tacos:
    Spread a little sauce on each tortilla, top with cabbage/slaw, grilled shrimp, avocado, cilantro, and a squeeze of lime.

  5. Serve:
    Serve immediately with extra sauce or lime wedges on the side.

 


Notes

  • Swap in fish or tofu for variety.

  • Add pickled onions, queso fresco, or mango salsa for extra flair.
