This Easy Ham and Bean Soup is a hearty, comforting one-pot meal made with tender ham, creamy white beans, and flavorful veggies in a rich, savory broth. Perfect for using up leftover ham and great for a quick and satisfying dinner!

  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 2 carrots (sliced)
  • 2 celery stalks (chopped)
  • 2 cups cooked ham (diced, or use a ham bone for extra flavor)
  • 3 cans (15 oz each) white beans (Great Northern, cannellini, or navy beans, drained and rinsed)
  • 6 cups chicken or vegetable broth (more if needed)
  • 1 tsp dried thyme (or 1 tbsp fresh thyme leaves)
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional, for a smoky depth)
  • 1 bay leaf
  • Salt & black pepper, to taste
  • 1 tbsp Dijon mustard (adds a subtle tang, optional but recommended)
  • 1 tbsp lemon juice or apple cider vinegar (for brightness, optional)

For Serving:

  • Fresh parsley (chopped, for garnish)
  • Crusty bread or cornbread (for dipping, optional but delicious!)

Instructions

Step 1: Sauté the Aromatics

  1. Heat olive oil or butter in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery, and sauté for 5-7 minutes until softened.
  3. Stir in garlic, thyme, oregano, and smoked paprika, cooking for 30 seconds until fragrant.

Step 2: Simmer the Soup

  1. Add the ham, beans, broth, bay leaf, and Dijon mustard. Stir well.
  2. Bring to a gentle boil, then reduce heat and let simmer uncovered for 25-30 minutes, stirring occasionally.
  3. If using a ham bone, simmer for 45 minutes, then remove it, shred any meat, and return it to the pot.

Step 3: Final Touches & Serve

  1. Stir in lemon juice or apple cider vinegar for a bright, balanced flavor.
  2. Taste and adjust salt and pepper as needed.
  3. Remove bay leaf, ladle into bowls, and garnish with fresh parsley.
