This comforting Hamburger Potato Casserole is a simple, budget-friendly dinner that’s perfect for busy weeknights. Layers of seasoned ground beef, tender potatoes, and creamy cheese make this casserole satisfying and delicious. Just bake and enjoy a warm, cozy meal that the whole family will love!

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cups potatoes, thinly sliced (about 3 medium potatoes)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese, plus extra for topping
  • Salt and pepper, to taste
  • ½ tsp garlic powder
  • ½ tsp paprika
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Cook Beef: In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion is soft, about 5-7 minutes. Season with salt, pepper, garlic powder, and paprika. Drain excess fat.
  • Prepare Sauce: In a mixing bowl, combine the cream of mushroom soup and milk, stirring until smooth.
  • Assemble Casserole: Lightly grease a 9×13-inch baking dish. Layer half of the sliced potatoes on the bottom. Spread half of the ground beef mixture over the potatoes, then pour half of the soup mixture over the beef. Sprinkle with half of the cheese. Repeat layers with the remaining potatoes, beef, soup mixture, and cheese.
  • Bake: Cover the dish with foil and bake for 45 minutes. Remove the foil and bake an additional 15 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
  • Serve: Garnish with fresh parsley if desired and serve warm.

Notes

  • For a creamier casserole, add a few dollops of sour cream to the soup mixture.
  • You can substitute the cream of mushroom soup with cream of chicken or cheddar cheese soup for a flavor twist.
