Easy Homemade Funfetti Cake is a soft, fluffy vanilla cake bursting with colorful sprinkles, perfect for birthdays, celebrations, or whenever you need a fun, festive dessert.

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • 1/2 cup rainbow sprinkles (jimmies type)
  • For the frosting (optional):
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 12 tablespoons milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch cake pan or line with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Mix milk and sour cream in a small bowl.
  6. Alternately add dry ingredients and milk mixture to the butter mixture, starting and ending with dry ingredients. Mix until just combined.
  7. Gently fold in sprinkles, being careful not to overmix to prevent color bleeding.
  8. Pour batter into prepared pan and bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool completely before frosting.
  10. For the frosting: Beat butter until creamy, then add powdered sugar, milk, vanilla, and salt. Beat until smooth and fluffy. Spread over cooled cake and top with additional sprinkles if desired.

Notes

  • Use jimmies-style sprinkles to avoid color bleeding.
  • Sour cream adds moisture and richness — don’t skip it!
  • Double the recipe for a 9×13-inch sheet cake or layer cake.
