This Easy Italian Baked Chicken is juicy, tender, and packed with flavor thanks to Italian herbs, garlic, and a simple olive oil marinade. It bakes up golden and delicious with minimal effort – perfect for serving with pasta, salad, or roasted veggies.

  • 4 boneless, skinless chicken breasts (or thighs)

  • 3 tablespoons olive oil

  • 2 teaspoons Italian seasoning

  • 2 cloves garlic, minced

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon paprika (optional, for color)

  • 1 tablespoon lemon juice or balsamic vinegar (optional, for brightness)

  • Fresh parsley or basil, chopped (for garnish)


Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking dish or line with foil.

  2. Make the marinade: In a small bowl, whisk together olive oil, Italian seasoning, garlic, salt, pepper, paprika, and lemon juice or vinegar (if using).

  3. Coat the chicken: Place chicken in the baking dish and pour the marinade over it. Use your hands or a brush to coat evenly on all sides. Let it sit for 10–15 minutes if you have time.

  4. Bake: Bake uncovered for 25–30 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is golden and cooked through.

  5. Rest and serve: Let the chicken rest for 5 minutes before slicing. Garnish with fresh herbs and serve.
