½ cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1½ cups all-purpose flour
1 tablespoon matcha powder (culinary grade)
½ teaspoon baking soda
¼ teaspoon salt
Optional: white chocolate chips or chopped white chocolate (½ cup)
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together butter and sugar until light and fluffy.
Add the egg and vanilla extract, mixing until well combined.
In a separate bowl, whisk together flour, matcha powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
If using, fold in white chocolate chips or chunks.
Scoop dough into 1½ tablespoon-sized balls and place on the baking sheet about 2 inches apart.
Bake for 10–12 minutes, or until edges are just set and centers are still soft.
Let cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
For a stronger matcha flavor, you can add up to 1½ tablespoons of matcha powder.
Don’t overbake — cookies will continue to firm up as they cool.
Store in an airtight container at room temp for up to 5 days.
