A zesty and flavorful Mexican chicken marinade that infuses chicken with bold spices, citrus, and herbs, perfect for grilling, baking, or pan-searing.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup lime juice (about 2 limes)
  • 2 tablespoons orange juice
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh cilantro (optional)

Instructions

  1. In a medium bowl, whisk together olive oil, lime juice, orange juice, garlic, cumin, chili powder, paprika, oregano, salt, and pepper.
  2. Add chopped cilantro if using, and mix well.
  3. Place chicken (breasts, thighs, or drumsticks) in a resealable plastic bag or shallow dish.
  4. Pour marinade over the chicken, ensuring all pieces are coated.
  5. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 4–6 hours or overnight for best flavor.
  6. Remove chicken from marinade and cook as desired — grill, bake, or pan-sear.

Notes

  • This marinade is enough for about 1.5 to 2 pounds of chicken.
  • Do not reuse leftover marinade unless boiled for safety.
  • Can also be used for shrimp or vegetables.
