This Easy M&M Ice Cream Sandwich Cake is the ultimate no-bake dessert! Layers of ice cream sandwiches, whipped topping, chocolate sauce, and colorful M&Ms come together for a fun and festive treat that’s perfect for kids and adults alike.

Ingredients

Scale
  • 12 ice cream sandwiches (vanilla or any flavor you like)
  • 1 tub (8 oz) whipped topping (like Cool Whip), thawed
  • 1 cup mini M&Ms (plus extra for garnish)
  • ½ cup chocolate syrup (plus extra for drizzling)
  • ¼ cup caramel sauce (optional)
  • Sprinkles (optional, for extra fun)

Instructions

  1. Prepare the Base Layer:

    • Arrange 6 ice cream sandwiches in a single layer on the bottom of a 9×13-inch baking dish or on a serving platter. You may need to trim the sandwiches slightly to fit.
  2. Add Layers:

    • Spread half of the whipped topping evenly over the ice cream sandwiches.
    • Drizzle half of the chocolate syrup over the whipped topping and sprinkle half of the mini M&Ms on top.
  3. Repeat Layers:

    • Add another layer of the remaining 6 ice cream sandwiches on top.
    • Spread the remaining whipped topping over the second layer.
    • Drizzle with the rest of the chocolate syrup (and caramel sauce if using).
    • Sprinkle the remaining M&Ms and sprinkles over the top for decoration.
  4. Freeze:

    • Cover the cake with plastic wrap or foil and freeze for at least 2-3 hours, or until firm.
  5. Serve:

    • Remove from the freezer 10 minutes before serving to soften slightly for easier slicing.
    • Slice, serve, and enjoy!

Notes

  • Swap out vanilla ice cream sandwiches for chocolate, strawberry, or cookies & cream for variety.
  • Add crushed Oreos, chopped nuts, or toffee bits between layers for extra crunch.
  • Store leftovers in the freezer for up to 1 week.
