A simple, flaky homemade pie crust that comes together with just a few ingredients — perfect for sweet or savory pies and beginner-friendly too!

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, cold and cubed
  • 34 tablespoons ice water

Instructions

  1. In a medium bowl, whisk together the flour and salt.
  2. Add the cold, cubed butter. Use a pastry cutter or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter.
  3. Drizzle in ice water, one tablespoon at a time, mixing gently with a fork until the dough starts to come together. You may not need all the water.
  4. Gather the dough into a ball and flatten into a disk. Wrap tightly in plastic wrap and chill in the refrigerator for at least 30 minutes before rolling out.
  5. When ready to use, roll the dough out on a lightly floured surface to fit your pie pan. Transfer to the pan, trim excess dough, and crimp the edges as desired.

Notes

  • Keep the butter and water as cold as possible for a flaky crust.
  • Chill the dough thoroughly before rolling to prevent shrinking.
  • Double the recipe for a double-crust pie.
