Scale
1 box (12 count) vanilla or chocolate chip cookies
1 pint vanilla ice cream, slightly softened
Red, white, and blue sprinkles
Optional: red and blue food coloring
Instructions
Let the vanilla ice cream sit at room temperature for 5–10 minutes until slightly softened.
Optional: Divide ice cream into two bowls and tint one red and the other blue using food coloring for a colorful layered effect.
Scoop about 2 tablespoons of ice cream onto the flat side of one cookie. Top with another cookie to make a sandwich and press gently.
Roll the edges of the ice cream in red, white, and blue sprinkles.
Place sandwiches on a baking sheet and freeze for at least 1 hour to firm up before serving.
Notes
Use store-bought or homemade cookies depending on your preference.
Work quickly and in small batches to prevent the ice cream from melting.
Wrap sandwiches individually in plastic wrap for easy storage and serving.
