This Easy Rice Pilaf is a simple, flavorful side dish made with tender rice, sautéed aromatics, and broth. It’s a versatile, quick-to-make recipe that pairs perfectly with any main course and is far more flavorful than plain rice!

  • 1 cup long-grain white rice (like basmati or jasmine)
  • 2 tablespoons unsalted butter (or olive oil)
  • ½ small onion, finely chopped
  • 1 clove garlic, minced
  • 2 cups low-sodium chicken broth (or vegetable broth for a vegetarian version)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Toast the Rice:

    • In a medium saucepan, melt butter over medium heat.
    • Add chopped onion and sauté until softened, about 2-3 minutes.
    • Stir in garlic and cook for 30 seconds until fragrant.
    • Add the rice and cook, stirring frequently, until lightly toasted, about 3-4 minutes.
  2. Cook the Rice:

    • Pour in the chicken broth, salt, pepper, and thyme (if using).
    • Bring to a boil, then reduce heat to low and cover.
    • Simmer for 15-18 minutes or until the rice is tender and the liquid is absorbed.
  3. Fluff and Serve:

    • Remove from heat and let the rice sit, covered, for 5 minutes.
    • Fluff with a fork and garnish with chopped parsley before serving.


Notes

  • Add ½ cup of diced carrots, peas, or bell peppers for extra veggies.
  • Use brown rice instead of white, but increase the cooking time to 40-45 minutes.
  • Swap out butter for olive oil for a dairy-free version.
