This easy, make-ahead breakfast casserole is packed with savory sausage, fluffy eggs, melted cheese, and crispy bread, making it perfect for weekends, holidays, or meal prep. Just mix, bake, and enjoy!

  • 1 lb (450g) breakfast sausage (pork, turkey, or chicken)
  • 10 large eggs
  • ½ cup milk (or heavy cream for richness)
  • 1 cup shredded cheddar cheese (or mozzarella)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 cup cubed bread (sourdough, French, or any sturdy bread)
  • ½ cup diced bell peppers (optional, for color & flavor)
  • ¼ cup chopped green onions (optional, for garnish)


Instructions

1. Preheat & Cook the Sausage

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, cook sausage, breaking it up until browned. Drain excess grease.

2. Mix the Egg Mixture

  1. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
  2. Stir in cheese, cooked sausage, cubed bread, and bell peppers.

3. Assemble & Bake

  1. Grease a 9×13-inch baking dish and pour in the egg mixture.
  2. Bake uncovered for 35-40 minutes, until the center is set.
  3. Let cool for 5 minutes, then sprinkle with green onions.

4. Serve & Enjoy

  • Slice and serve warm with hot sauce, salsa, or avocado!
