These Easy Sausage Breakfast Muffins are a hearty, grab-and-go breakfast loaded with sausage, cheese, and eggs. Perfect for busy mornings or meal prepping, they’re simple to make and packed with flavor.

  • 1 lb ground breakfast sausage
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 cup chopped green onions (optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin or line with paper liners.
  2. Cook the Sausage:
    • In a skillet over medium heat, cook the ground sausage until browned and fully cooked. Drain any excess grease and set aside to cool slightly.
  3. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, black pepper, and salt until well combined.
  4. Assemble the Muffins:
    • Divide the cooked sausage evenly among the muffin cups.
    • Sprinkle shredded cheddar cheese on top of the sausage.
    • Pour the egg mixture into each muffin cup, filling them about 3/4 full. Top with chopped green onions, if using.
  5. Bake:
    • Bake for 20–25 minutes, or until the egg is set and the muffins are lightly golden.
  6. Cool and Serve:
    • Let the muffins cool in the pan for 5 minutes before removing. Serve warm or store for later.
