Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh strawberries, chopped
  • Optional Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons fresh strawberry puree or milk

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or square cake pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat butter and sugar until light and fluffy, about 2–3 minutes.
  4. Add eggs one at a time, beating well after each. Mix in sour cream and vanilla.
  5. Gradually add dry ingredients and mix until just combined.
  6. Gently fold in chopped strawberries.
  7. Spread batter evenly in prepared pan. Bake for 30–35 minutes or until a toothpick comes out clean.
  8. Cool completely. For glaze, whisk powdered sugar with strawberry puree or milk until smooth, then drizzle over cooled cake.
