  • 1/2 cup (120 ml) milk or cream
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 large flour tortillas
  • 1 lb (450 g) cooked breakfast sausage or bacon, crumbled
  • 1/2 cup (75 g) diced bell peppers
  • 1/2 cup (75 g) diced onions
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (100 g) shredded Monterey Jack cheese (optional)
  • 1/4 cup (30 g) chopped green onions (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. Assemble the Layers:
    • Place one tortilla on the bottom of the baking dish. Spread a layer of cooked sausage or bacon, followed by a sprinkle of diced bell peppers, onions, and cheese.
    • Repeat the layers, ending with a tortilla on top. Pour the egg mixture evenly over the layers, pressing down gently to ensure the tortillas absorb the liquid. Sprinkle the top with the remaining cheese.
  4. Bake:
    • Cover the dish with foil and bake for 25 minutes. Remove the foil and bake an additional 10-15 minutes, or until the eggs are set and the top is golden.
  5. Cool and Serve:
    • Let the casserole cool for 5 minutes before slicing. Garnish with chopped green onions and serve warm.
