These eggnog snickerdoodles are a festive twist on the classic cookie. Soft, chewy, and flavored with warm spices and a hint of eggnog, they’re perfect for holiday baking. Rolled in a cinnamon-nutmeg sugar coating, these cookies are a cozy treat for any occasion!

For the cookies:

  • 1 cup (225 g) unsalted butter, softened
  • 1 1/2 cups (300 g) granulated sugar
  • 1/4 cup (60 ml) eggnog
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups (345 g) all-purpose flour
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg

For the coating:

  • 1/4 cup (50 g) granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Make the dough:
    • In a large mixing bowl, beat the softened butter and sugar together until light and fluffy (about 2–3 minutes).
    • Add the eggnog, egg, and vanilla extract, mixing until well combined.
    • In a separate bowl, whisk together the flour, cream of tartar, baking soda, salt, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
  3. Prepare the coating:
    • In a small bowl, mix together the sugar, cinnamon, and nutmeg.
  4. Shape the cookies:
    • Scoop 1 1/2 tablespoons of dough (or use a medium cookie scoop) and roll into balls. Roll each ball in the sugar-cinnamon-nutmeg mixture to coat. Place the dough balls 2 inches apart on the prepared baking sheets.
  5. Bake:
    • Bake for 10–12 minutes, or until the edges are set but the centers still look slightly underbaked. The cookies will firm up as they cool.
  6. Cool and serve:
    • Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.


Notes

  • For a stronger eggnog flavor, add 1/2 teaspoon rum extract to the dough.
  • Store cookies in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.
  • Add a drizzle of eggnog glaze (powdered sugar mixed with eggnog) for an extra festive touch.
