Ingredients

Scale
  • 1 lb ground beef or shredded chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies
  • 2 cups red enchilada sauce
  • 8 corn tortillas, cut in halves
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook until soft, about 3-4 minutes.
  3. Add garlic and cook for 30 seconds more. Add ground beef or chicken and cook until browned and fully cooked.
  4. Stir in cumin, chili powder, paprika, salt, and pepper. Mix well.
  5. Add black beans and diced tomatoes. Cook for 2-3 more minutes. Remove from heat.
  6. Spread a thin layer of enchilada sauce on the bottom of a 9×13-inch baking dish.
  7. Layer 4 tortilla halves over the sauce, followed by 1/3 of the meat mixture, some enchilada sauce, and a layer of cheese.
  8. Repeat layers twice more, ending with cheese on top.
  9. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10 minutes or until cheese is bubbly and melted.
  10. Garnish with chopped cilantro if desired and serve warm.
