1/2 cup peanut butter (or almond butter)
1/3 cup honey or maple syrup
1/2 cup ground flaxseed
1/2 cup mini chocolate chips or dried fruit
1 tsp vanilla extract

Instructions
In a large mixing bowl, combine the oats, peanut butter, honey, flaxseed, chocolate chips, vanilla extract, and salt.
Stir well until all ingredients are thoroughly mixed and a sticky dough forms.
Place the mixture in the refrigerator for about 20–30 minutes to firm up.
Once chilled, use your hands or a small scoop to form the mixture into 1-inch balls.
Store energy balls in an airtight container in the refrigerator for up to 1 week or in the freezer for up to 3 months.
Notes
