  • 1 cup cooked rice (white, brown, or Mexican rice)
  • 1 cup sour cream or Greek yogurt
  • 1 packet (30 g) taco seasoning (or homemade blend)
  • 1 ½ cups shredded cheddar cheese (or a Mexican cheese blend)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder (optional for extra heat)
  • Salt and pepper, to taste

For Topping (Optional):

  • Crushed tortilla chips or Doritos
  • Fresh cilantro, chopped
  • Diced avocado or guacamole
  • Sliced jalapeños
  • Salsa or hot sauce

Instructions

1. Preheat the oven:

  • Preheat your oven to 190°C (375°F). Lightly grease a 9×13-inch (23×33 cm) baking dish.

2. Mix the casserole base:

  • In a large mixing bowl, combine the shredded chicken, black beans, corn, diced tomatoes, cooked rice, sour cream, taco seasoning, garlic powder, onion powder, chili powder, salt, and pepper.
  • Mix until everything is evenly combined.

3. Assemble the casserole:
