For the Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Juice of ½ lime

For the Rice:

  • 2 cups cooked rice (white, brown, or cilantro lime rice)
  • ½ teaspoon salt
  • Juice of ½ lime
  • ¼ cup chopped fresh cilantro

For the Toppings:

  • 1 cup black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • ½ cup cherry tomatoes, halved
  • ½ red bell pepper, diced
  • ¼ cup red onion, finely chopped
  • 1 avocado, diced
  • ¼ cup crumbled cotija or feta cheese (optional)

For the Dressing:

  • ¼ cup plain Greek yogurt or sour cream
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce (optional)
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt

Instructions

  1. Cook the Shrimp:

    • In a bowl, toss shrimp with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and lime juice.
    • Heat a skillet over medium-high heat and cook shrimp for 2-3 minutes per side, until pink and opaque. Remove from heat.
  2. Prepare the Rice:

    • Mix cooked rice with salt, lime juice, and chopped cilantro. Set aside.
  3. Make the Dressing:

    • In a small bowl, whisk together Greek yogurt, lime juice, hot sauce (if using), garlic powder, and salt.
  4. Assemble the Bowls:

    • Divide the rice among bowls.
    • Top with black beans, corn, tomatoes, bell pepper, red onion, avocado, and cooked shrimp.
    • Drizzle with the lime dressing and sprinkle with cotija cheese if using.
