1 lb filet mignon, cut into 1-inch cubes
1 tbsp olive oil
2 tbsp unsalted butter
2 cloves garlic, minced
1 tsp fresh rosemary, chopped
Salt and black pepper, to taste
Optional: toothpicks for serving
Instructions
Pat the filet mignon cubes dry with paper towels and season generously with salt and pepper.
Heat olive oil in a skillet over medium-high heat until hot.
Add filet mignon cubes in a single layer and sear for 1–2 minutes per side, until browned and cooked to desired doneness.
Reduce heat to medium and add butter, garlic, and rosemary to the pan.
Spoon the melted butter and aromatics over the bites for 1–2 minutes to infuse flavor.
Remove from pan and let rest for a few minutes before serving.
Serve with toothpicks as an appetizer or over mashed potatoes or salad as a main dish.
Notes
For medium-rare, aim for an internal temperature of 130–135°F.
Use a cast iron skillet for best sear and flavor.
Can be paired with dipping sauces like garlic aioli or chimichurri.
