Ingredients

  • 1 tablespoon olive oil

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 red onion, sliced

  • 1 zucchini, sliced into half-moons

  • 1 teaspoon chili powder

  • 1/2 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon garlic powder

  • Salt and pepper, to taste

  • Juice of 1 lime

  • 8 small flour or corn tortillas

Optional Toppings:

  • Sliced avocado or guacamole

  • Sour cream or Greek yogurt

  • Fresh cilantro

  • Salsa or pico de gallo

  • Shredded cheese

  • Lime wedges

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add sliced peppers, onion, and zucchini to the pan. Cook for 6–8 minutes, stirring often, until veggies are tender-crisp and slightly charred.

  3. Sprinkle with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper. Stir to coat evenly.

  4. Squeeze fresh lime juice over the veggies and toss to combine.

  5. Warm tortillas in a dry skillet or microwave.

  6. Serve veggie mixture in warm tortillas with your favorite toppings.
