1 cup light brown sugar, packed
1 large egg
1 tsp vanilla extract
1 cup all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
3/4 cup white chocolate chips
1/2 cup red, white, and blue sprinkles (plus extra for topping)
Instructions
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.
In a medium bowl, mix melted butter and brown sugar until smooth. Let cool slightly.
Whisk in the egg and vanilla until well combined.
Stir in flour, baking powder, and salt until just combined.
Fold in white chocolate chips and sprinkles.
Spread batter evenly in the prepared pan and top with extra sprinkles.
Bake for 20–25 minutes, or until the edges are golden and the center is just set.
Cool completely in the pan before slicing into squares.
Notes
Do not overbake for soft, chewy blondies.
Substitute regular rainbow sprinkles for non-holiday versions.
