This Fluffy Cottage Cheese Cloud Bread is a light, airy, and protein-packed bread alternative that’s perfect for sandwiches, snacks, or a low-carb treat. Made with just a few simple ingredients, it’s naturally gluten-free, low-carb, and keto-friendly!

Ingredients

  • ½ cup cottage cheese (full-fat for best texture)
  • 3 large eggs, separated
  • ¼ teaspoon cream of tartar (helps stabilize the egg whites)
  • ½ teaspoon salt
  • ½ teaspoon garlic powder (optional, for flavor)
  • ¼ teaspoon baking powder (for extra fluffiness)

Instructions

1. Preheat Oven & Prep Baking Sheet:

  1. Preheat oven to 325°F (163°C).
  2. Line a baking sheet with parchment paper or lightly grease it.

2. Whip the Egg Whites:

  1. In a clean bowl, beat egg whites with cream of tartar using a hand mixer until stiff peaks form (about 3-4 minutes).

3. Blend Cottage Cheese Mixture:

  1. In a separate bowl, whisk together egg yolks, cottage cheese, salt, garlic powder, and baking powder until smooth.

4. Fold the Mixtures Together:

  1. Gently fold the whipped egg whites into the cottage cheese mixture, using a spatula. Be careful not to deflate the mixture.

5. Form & Bake:

  1. Spoon the batter onto the prepared baking sheet in 6-8 round mounds, spreading slightly to shape.
  2. Bake for 25-30 minutes, until golden brown and firm to the touch.

6. Cool & Serve:

  1. Let cool on a wire rack for 5 minutes before serving.
  2. Enjoy plain, as a sandwich, or topped with butter, honey, or cream cheese!
