Fluffy Matcha Muffins are light, moist muffins infused with the earthy flavor of green tea powder, offering a slightly sweet and antioxidant-rich treat perfect for breakfast or an afternoon snack.

  • 1 3/4 cups all-purpose flour
  • 2 tsp matcha green tea powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup granulated sugar
  • 2/3 cup milk
  • 1/2 cup plain yogurt
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  2. In a large bowl, whisk together flour, matcha powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together sugar, milk, yogurt, oil, eggs, and vanilla until smooth.
  4. Pour the wet ingredients into the dry and gently mix until just combined. Do not overmix.
  5. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  6. Bake for 16–18 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

  • Do not overmix the batter to maintain a fluffy texture.
