Foolproof French Macarons are delicate almond meringue cookies with crisp shells and chewy centers, filled with buttercream, ganache, or jam. This simplified recipe guides you to consistent, bakery-quality results.

  • 1 cup powdered sugar
  • 3/4 cup almond flour
  • 2 large egg whites, at room temperature
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar (optional, for stability)
  • 1/2 teaspoon vanilla or almond extract (optional)
  • Food coloring (gel preferred, optional)
  • For Filling:
  • 1/2 cup buttercream, ganache, or jam of choice

Instructions

  1. Line 2 baking sheets with parchment paper or silicone mats. Prepare a piping bag with a round tip.
  2. Sift together almond flour and powdered sugar into a bowl. Discard large bits. Set aside.
  3. In a clean bowl, beat egg whites until foamy. Add cream of tartar if using. Gradually add granulated sugar and beat to stiff, glossy peaks. Add extract and food coloring if desired.
  4. Fold almond flour mixture into meringue in thirds, using a spatula. Gently fold until batter flows in thick ribbons and can form a figure-8 without breaking—this is called macaronage.
  5. Transfer batter to piping bag and pipe 1.5-inch circles onto prepared sheets. Tap trays firmly on counter to release air bubbles.
  6. Let macarons sit at room temperature for 30–60 minutes until a skin forms and tops are no longer sticky to the touch.
  7. Preheat oven to 300°F (150°C). Bake for 14–16 minutes, rotating halfway. Shells should have feet and release cleanly from the parchment when done.
  8. Cool completely before filling. Pipe filling onto half the shells and sandwich with the other half.
  9. Store in an airtight container in the fridge for 24 hours to mature for best texture. Bring to room temperature before serving.

  • Use aged egg whites for best meringue stability.
  • Weigh ingredients with a kitchen scale for the most accurate results.
  • Humidity can affect macarons—avoid baking on very humid days if possible.
