  • 1 small onion, diced
  • 1 cup uncooked long grain white rice
  • 1 can (10.5 oz) French onion soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 1/2 cups beef broth
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 cup shredded mozzarella or Swiss cheese
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, heat olive oil and cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
  3. In a large bowl, combine uncooked rice, French onion soup, cream of mushroom soup, beef broth, garlic powder, and black pepper.
  4. Stir in the cooked beef and onion mixture until well combined.
  5. Pour mixture into the prepared baking dish and spread evenly.
  6. Cover tightly with foil and bake for 50–60 minutes, or until rice is tender and liquid is absorbed.
  7. Remove foil, sprinkle cheese evenly over the top, and bake uncovered for an additional 5–10 minutes until cheese is melted and bubbly.
  8. Let sit for 5 minutes before serving.
