These French Toast Churro Bites are crispy on the outside, soft on the inside, and coated in a delicious cinnamon-sugar mix. They taste like mini churros but with the fluffy goodness of French toast—perfect for breakfast, brunch, or a fun snack!

For the French Toast Bites:

  • 4 slices thick-cut bread (Brioche, Texas Toast, or French bread)
  • 2 large eggs
  • 1/2 cup milk (or heavy cream for extra richness)
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tbsp sugar
  • 1 tbsp butter (for frying)

For the Churro Coating:

  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 2 tbsp melted butter (for tossing)

For Dipping (Optional but Delicious!):

  • Chocolate sauce 🍫
  • Caramel sauce 🍯
  • Maple syrup 🍁

Instructions

1. Prep the Bread:

  • Cut bread slices into 1-inch cubes.
  • Set aside while you prepare the batter.

2. Make the French Toast Batter:

  • In a bowl, whisk together eggs, milk, vanilla, cinnamon, and sugar until smooth.

3. Dip & Cook the Bites:

  • Heat butter in a skillet over medium heat.
  • Dip bread cubes into the egg mixture (don’t soak too long!).
  • Cook in the skillet for 2-3 minutes per side, until golden brown and crispy.

4. Coat in Churro Mixture:

  • In a small bowl, mix sugar and cinnamon for the churro coating.
  • Brush the warm bites with melted butter, then toss them in the cinnamon-sugar mixture.

5. Serve & Enjoy:

  • Serve warm with chocolate, caramel, or maple syrup for dipping!


Notes

  • Want extra crispiness? Bake the bites at 375°F (190°C) for 5 minutes after pan-frying.
  • Make it ahead: Cook and store in an airtight container, then reheat in the oven or air fryer.
  • Air Fryer Option: Air fry at 350°F for 6-8 minutes, flipping halfway.
