This fresh pea soup is light, creamy, and packed with the sweet flavor of spring peas. It’s easy to make and perfect as a starter or a light lunch. Serve it warm or chilled—either way, it’s delicious and refreshing.

Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 4 cups fresh or frozen green peas

  • 3 cups vegetable broth

  • 1/2 cup fresh mint leaves (optional)

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • 1/2 cup heavy cream or coconut milk (optional, for creaminess)

  • Lemon juice, to taste

Instructions

  • Heat olive oil in a pot over medium heat.

  • Add chopped onion and cook for 3–4 minutes until softened.

  • Stir in garlic and cook for another 1 minute.

  • Add peas and vegetable broth. Bring to a boil, then reduce heat and simmer for 8–10 minutes, until peas are tender.

  • Remove from heat. Stir in mint leaves, if using.

  • Blend the soup using an immersion blender or in batches in a blender until smooth.

  • Stir in cream or coconut milk, if using.

  • Season with salt, pepper, and a splash of lemon juice to brighten the flavor.

  • Serve warm or chilled, garnished with extra mint or a drizzle of cream if desired.

Notes

  • For a vegan version, use coconut milk instead of cream.

  • Fresh mint adds a lovely flavor, but you can skip it for a more classic pea taste.

  • Great served with crusty bread or a grilled cheese sandwich.
