Fresh Watermelon Cake is a refreshing, healthy dessert made by trimming a thick slice of watermelon into a cake shape and decorating it with whipped cream, fresh fruits, and optional nuts or coconut flakes. It’s a fun, vibrant treat perfect for summer parties and gatherings.

Ingredients

  • 1 small seedless watermelon (or a thick round slice from a large one)
  • 1 cup whipped cream or whipped coconut cream
  • 1/2 cup fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup sliced almonds or shredded coconut (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Cut both ends off the watermelon and trim the rind from the sides to create a cylindrical “cake” shape.
  2. Pat the watermelon dry with paper towels to help the cream adhere.
  3. Frost the outside of the watermelon with whipped cream or coconut cream using a spatula.
  4. Decorate the top and sides with fresh berries, nuts, and coconut as desired.
  5. Garnish with mint leaves and chill until ready to serve.
  6. Slice like a cake and enjoy immediately.
