Instructions

  1. Prepare the potatoes and onions:
    • Peel and thinly slice the potatoes into rounds or wedges. Keep them consistent in size for even cooking.
    • Slice the onion into thin rings or half-moons.
  2. Soak the potatoes (optional):
    • For crispier potatoes, soak them in cold water for 15-20 minutes to remove excess starch. Drain and pat them dry thoroughly with a kitchen towel.
  3. Heat the oil:
    • In a large skillet, heat the vegetable oil or butter over medium heat. Ensure the pan is hot before adding the potatoes.
  4. Cook the potatoes:
    • Add the potatoes to the skillet in a single layer. Let them cook undisturbed for 5-7 minutes until they develop a golden-brown crust.
    • Stir or flip the potatoes and continue cooking for another 10-15 minutes, stirring occasionally, until tender and crispy.
  5. Add the onions:
    • Add the sliced onions to the skillet with the potatoes. Season with salt, black pepper, and optional seasonings like paprika or garlic powder.
    • Cook for another 5-7 minutes, stirring occasionally, until the onions are caramelized and the potatoes are fully cooked.
  6. Serve:
    • Remove from heat and garnish with fresh parsley or thyme if desired. Serve warm as a side dish or top with eggs for a breakfast hash.
